Post of the Day--Empanada of the Day--Rollitos

I discovered a rollito last week when I walked by a local cafe in the plaza near the apartment.  They looked cute and they were described as having chicken in them, so I thought, "how bad could that be?"  A little dough around chicken and fried or baked (I actually can't tell. They are not greasy at all or crispy, that's why I think baked. But nearly everything else there is fried, that's why chances are they are fried).  I did not think to take a picture that day, so I have been describing them (I didn't know their name until he told me) to Wil and stalking the cafe to find them again.  Finally, they had them again in their display case.

To my delight, the rollito is a crepe-like pancake rolled with chicken, carrots, and seasoning.  The one this week is a little thicker pancake than the one last week.  On the outside there is some sort of flour I believe.  It is not cornmeal or flour, so maybe it is made from yucca or some other local root.

A savory pancake roll-up, can you say delicious?
