Yes, people, I said "double fried!" Get over it, they are freakin' delicious! You will want some! First wash, peel, then wash a couple of plantains. Slice into 1/2 -3/4 inch pieces.

Place the plantain slices in hot oil that is about 1/4-1/2 inch deep.

Turn each slice over once, that's what Wil does.

Remove from pan. I would say put them on a paper towel, but you are putting them back into oil, so really, what's the point? Anyway, now is the fun part. Wil has a special tool, but you could just use a rolling pin, a large can lid or whatever, to flatten each slice.

The tool is akin to a hambuger patty press that some of you may have or use.

Return the squished plantains back to the hot oil (hence the double fried part)!

Wil again turns each slice one time.

When they are golden on both sides remove them from the pan. Again, I could mention a paper towel for absorbing some of the grease, but nevermind. Instead, immediately douse with a lot of salt while the plantains are still hot! I'm sure the salt soaks up some of the grease, ha!

I hope you can see from the picture about how much salt I meant! Quite a bit! A lot! These are little pieces of fried, salty paradise! Enjoy! A lot of people eat them with ketchup. For me, their salty crispiness was good enough! They are served here at fast food and fried chicken places like we serve French fries. But don't worry, they also have the French fries too!
