Tayota

Tayota is not a vegetable that I am familiar with...are you?? Anyway, it is a basic slightly starchy vegetable.
Wil peeled the tayota and then boiled until it was fork tender.
He then used it like he used the verenjena (eggplant), in the red sauce. Prepare the sauce for the tayota with oil in a skillet. Add 3 T chopped aji peppers, 1/2 cube bouillion, 1 t garlic paste, 3 T tomato paste,1 t vinegar, and 1 fresh tomato chopped into pan. Once these ingredients are sauteed, add 1 c water or so. Cook down the sauce a bit.

I'm sorry I don't have a picture of the tayota in the sauce. But, you could look at the eggplant in sauce under the moro recipe and find a similar picture.

Yes, honey - I've heard of it. It's actually chayote, it's a variety of squash, and it's really good steamed or sauteed too. What a delicate flavor, huh?
